Une recette de burger cru et vegan !
Sur une base de champignons, ces mini-burgers sont adaptables à chaque saison.
Pour une dizaine de burgers
Ingrédients
• 10 champignons rosés de Paris
• 1 radis ou concombre (en été)
• 10 tomates séchées et trempées dans l’eau
• 2 avocats moyens
• graines de sésame
• tamari, sel, poivre, vinaigre de cidre
• 1 gousse d’ail
Matériel
Déshydrateur, mandoline, blender.
Préparation
> Pour le « pain »
Nettoyer les champignons, les faire mariner 1/2 heure avec une c. à s. de tamari, 1 c. à c. de graines de sésame et du poivre. Les disposer dans le déshydrateur pendant 4 heures.
> Pour la garniture
Mandoliner le radis ou le concombre en fines tranches et les faire mariner avec 1 c. à s. de vinaigre et 1 c. à c. de tamari.
> Pour la sauce « ketchup »
Passer au blender les tomates séchées avec 10 cl d’eau, en ajouter si la sauce n’est pas assez fluide.
> Pour la crème d’avocat
Dénoyauter les avocats, les passer au blender avec une gousse d’ail et une pincée de sel, puis mettre la préparation dans une poche à douille.
> L’assemblage
Lorsque les champignons sont « cuits », disposer dessus d’abord une petite couche de tomate, les rondelles de radis ou de concombre, de nouveau une couche de tomate, et pour finir pocher la crème d’avocat.
