L’angélique est une véritable panacée, une plante aux milles vertus, « une des plus précieuses », d’après le Dr Jean Valnet. Pourtant, elle est tombée dans l’oubli autant par sa culture que son utilisation.

Petite histoire de l’angélique
L’angélique officinale, Angelica archangelica. Quel nom pour cette grande et belle ombellifère, (famille de végétaux renommée aujourd’hui les apiacées) venue du Nord ainsi nommée « racine du Saint Esprit » !
« Contre le « mauvais air » !
Vantée contre la peste, elle était réputée au XVIe siècle lors des épidémies pour chasser le mauvais air et éviter toutes formes de contagion. On croquait des graines pour se protéger des maladies contagieuses. Son nom « angelica », ange-gardien, lui vient de son grand pouvoir de protection.
Pourquoi donc est-elle tombée dans l’oubli ? Trop de propriétés en serait-il la raison ? L’arrivée du ginseng lui aurait-elle fait perdre son intérêt ? Panax ginseng, qui porte en son nom la panacée et qu’on nomme racine de longue vie…
« Si cette plante avait le mérite d’être étrangère, elle serait aussi précieuse pour nous que le ginseng l’est chez les Chinois. » Bodart (1810).
Une plante médicinale
On a cultivé l’angélique comme plante alimentaire dans les pays nordiques depuis le XIIe siècle. Mais elle a fait son apparition dans les monastères comme plante médicinale pour ses effets thérapeutiques plus que culinaires du Moyen Âge au XVIIIe siècle.
C’est sa racine qui dispose aujourd’hui d’une monographie de contrôle dans la pharmacopée européenne. Cependant, toutes les parties de la plante (racine, tige, fleurs, feuilles et semences) était traditionnellement utilisées.
L’angélique aux bienfaits innombrables…
Reconnue comme grande plante de la digestion par l’action antispasmodique de son huile essentielle contenue dans la racine, on la préconise contre les colites spasmodiques douloureuses, les ballonnements, les lenteurs, les éructations et les flatulences. Tonique digestif (crue ou cuite), elle facilite la digestion des aliments gras (comme la sauge). Elle est apéritive, carminative, cholagogue mais aussi sudorifique, béchique, emménagogue, diurétique et expectorante !
Elle a fait ses preuves comme contrepoison de la belladone, la cigüe ou encore le colchique.
C’est un tonique général en cas d’asthénie et de fatigue en plus d’avoir des propriétés sédatives et anxiolytiques…
L’angélique dans nos jardins
Très robuste, à grosses racines, elle peut atteindre 2 à 3 mètres de haut et ses feuilles jusqu’à 1 mètre de longueur. Cette grande plante herbacée pluriannuelle affectionne les terrains ensoleillés, les sols frais, voire humides, légèrement acides. Elle meurt après sa première floraison (2 à 4 ans).
Pour l’inviter au jardin, on peut la planter de mars à mai ou la semer pour les plus audacieux de juin à septembre. Une fois son cycle de vie terminé elle n’aura pas manqué de laisser quelques descendances en se ressemant si elle se plaît….
Les racines se récoltent d’octobre à novembre mais peuvent aussi être prélevé en mars juste avant la reprise de la végétation, les graines au mois d’août-septembre et les jeunes pousses en avril-mai.
Et dans nos assiettes !
Les abeilles se régaleront de son nectar, et pour nous, tout se mange dans l’angélique, des graines à la racine ! Très cuisinée en Chine et en Scandinavie, elle a été longtemps le seul légume disponible du Groenland. C’est d’ailleurs l’angélique de Laponie qui serait la plus active dans le choix d’une variété à cultiver. Les tiges fameuses et devenues stars confites, les feuilles en compote avec des fruits acides, les jeunes pousses en salade, les racines cuites à la vapeur, les fleurs pour aromatiser les desserts et les graines pour la liquoristerie… la Chartreuse, la Bénedictine et autres élixirs de longue vie.

Modes de préparation
- Décoction de racines et jeunes pousses : 10 à30 g par litre d’eau, une tasse après chaque repas.
- Infusion de graines : 8 à 15 g par litre d’eau (d’après Paul-Victor Fournier qui rapportait en 1947 son utilisation contre le cancer de l’estomac…).
- Recette de vin d’angélique du Dr Jean Valnet : 60 g de racines coupées + 8 g de cannelle fine dans 2 litres de vin rouge. Infuser à froid pendant 4 jours, filtrer. 1 cuillère à soupe matin, midi et soir comme vin tonique et digestif.
Précautions
- Tout comme le millepertuis, elle contient des substances photosensibilisantes, éviter donc de s’exposer aux rayons du soleil après l’ingestion d’angélique ou pour tout usage externe.
- La dessiccation des fleurs et des feuilles enlève leurs propriétés.
